Recipe: Cilantro Lime Roasted Potatoes

My cooking skills are ok at best, but over time, I've gotten the confidence to experiment in the kitchen.  (and I've also "trained" my boyfriend to be a little less harsh with his criticism) Most recently, I decided that I wanted to try and make something with cilantro, so I threw together what I called cilantro lime roasted potatoes.  (think Chipotle rice...but potatoes) 

Ingredients:
  • One bunch of cilantro, roughly chopped
  • Cubed potatoes - skin on
  • Minced garlic - as little or as much as you like
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Lime juice

Method:
  1. Pre-heat your oven to 450 degrees and grease a cookie tray, metal cake pan, or casserole dish.
  2. Mix potatoes, garlic, and oil together and place on tray/pan/etc. 
  3. Add half of cilantro to potato mixture.  Mix thoroughly. 
  4. Add a tablespoon or more of lime juice to potato mixture. 
  5. As the potatoes are cooking, continue to add lime juice to your liking.  I like limey foods, but for a more subtle flavor, less lime juice is needed. 
  6. Cook potatoes for 35-45 minutes until they become soft. Stir every 5-8 minutes. 10 minutes before potatoes are done cooking, add remainder of cilantro and mix thoroughly.  Feel free to add more lime juice, too.
  7. Serve and eat!

Overall, I think this experiment came out pretty well - the potatoes were flavorful with a touch of cilantro and lime. I would have liked a stronger cilantro flavor, but as I learned through the power of Google, I should have waited to add the cilantro until closer to the end of the cook time. (I added it all at the beginning - d'oh!) Oh well! Next time!
