I'm the first person to be skeptical about vegan desserts. I've had many a bland, unsatisfying, or just downright disgusting vegan dessert in my day. For a time, I even swore off vegan desserts completely, buying into the notion that it wouldn't be possible to find a delicious vegan dessert. However, I've recently had some better luck with vegan baked goods, discovering Whole Foods' vegan brownies, and some other local vegan dessert varieties.
I was fortunate enough to attend the FREE vegan baking class held at Whole Foods last night and learned all about baking vegan cupcakes. Specifically, cupcakes from the book "Vegan Cupcakes Take Over the World." I've been on a cupcake kick lately, visiting cupcakeries all around town, and I'd dare say that the cupcakes I had from this vegan cookbook could go toe to toe with any of their dairy filled cousins. The class presented three of the seemingly endless varieties of cupcakes in the book. (I would have bought a copy but they didn't have any in stock - sad!) The flavors du jour were vanilla, chocolate, and my favorite, chai. I can't say that I'm a big chai latte fan, but the spiciness of the chai cupcake reminded me of fall (which was why the instructor had made that particular cupcake - hooray for the first day of fall). It made me think about the coming fall months and all of the delicious pumpkin-y desserts that will soon be in my belly. (I might sell my soul for some good pumpkin pie. Really.) In my haste, I didn't get a photo of the cupcake, but if you're even the tiniest fan of cupcakes and/or vegan food, I suggest you check out "Vegan Cupcakes Take Over the World." (I plan on running out to Barnes and Noble to buy it today!)
