Michael Angelo's Eggplant Parmesan

If I had to eat eggplant (preferably baked, and not fried) every day for the rest of my life, I think I'd be ok with that.

When I'm not feeling lazy, which hasn't been very often lately, I'll cook up some Dominex Eggplant Cutlets. When I lived alone, I had figured out how to perfectly cook these cutlets in the microwave (I like burned food, remember?), but now that I'm trying to eat like a "big girl," I generally cook them in the oven. They're surprisingly low in calories (100 per serving) and are vegan, so I think they're a relatively healthy choice for dinner.

Another one of my favorite eggplant dinner options is Michael Angelo's Eggplant Parmesan.


I like the fact that it's baked - not fried - and that it's relatively low in calories - 160 per serving. (Although if you're going to eat this, most likely you'll eat both servings that come in the box at one time.) Unlike frozen eggplant entrees that I've had from other companies, the eggplant in the Michael Angelo's entrees always tastes fresh. I can't tell you how many other variations of eggplant parm I've had with funky tasting eggplant. Ugh.


The one downside to this little frozen gem is the cost. Each package is nearly $5. Considering that it's all natural, tastes great, and costs much less than I'd pay for a fatty restaurant entree, it's worth every penny to me.

  2. I’m echoing the previous comment. This product IS NOT VEGETARIAN. It contains cheeses that are made with rennet made from an animal source, meaning it is a product of slaughter and therefore is not vegetarian. Please do not feed this to your vegetarian friends and family.

  3. And I'll echo that previous message....
    If they would just use another type cheese without rennet It would open this meal option for many vegetarians!
